
I cannot begin to tell you all the benefits of changing your diet. One of the most important benefits is cancer prevention. The research that substantiates the link is enormous. I will only give you some highlights and encourage you to read one of the books on my suggested reading list.
I have talked a lot about decreasing animal fat. However the key is to change the type of fat from omega-6 fats to omega-3 or omega-9. The worst oils are the transfatty acids. These are omega-6 oils that have been hydrogenated or partially hydrogenated. The one change I would advocate more than anything else is avoid partially hydrogenated oils.
These oils are preservatives so read the labels.
Good oils are omega 3 and 9. These oils are found in cold water fish like salmon and mackerel. Olive oil is high in omega-9. Use olive oil whenever you cook with oil Consuming 2 grams of fish oil a day will decrease your risk of cancer and cardiovascular disease.
Also, decreasing sugar and simple carbohydrates which decreases insulin levels protects against cancer. Insulin also stimulates cell growth and has receptors on cancer cells.
Increasing fiber, limiting alcohol, increasing foods that are antioxidants all play a role in prevention. You will be astounded when you discover how important your dietary habits are in preventing cancer.
